  • 1 large ripe Avocado, mashed
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a medium bowl, mash the ripe avocado until desired consistency is reached.
  2. Add lime juice to the mashed avocado and stir to combine.
  3. Mix in the rinsed black beans, corn, red onion, and cilantro.
  4. Sprinkle cumin powder, chili powder, salt, and pepper over the mixture.
  5. Gently fold all ingredients together using a spatula, avoiding too much mashing of the black beans.
  6. Taste the filling and adjust seasoning if needed.
  7. Warm the tortillas in a skillet or microwave.
  8. Lay a warm tortilla flat and spoon one-quarter of the filling into the center; shape it into a log.
  9. Fold in the top and bottom ends of the tortilla, then roll it snugly from the bottom up until sealed.
  10. Repeat with remaining tortillas and enjoy immediately.
