- 1 large ripe Avocado, mashed
- ½ cup of Frozen or Canned Corn
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium bowl, mash the ripe avocado until desired consistency is reached.
- Add lime juice to the mashed avocado and stir to combine.
- Mix in the rinsed black beans, corn, red onion, and cilantro.
- Sprinkle cumin powder, chili powder, salt, and pepper over the mixture.
- Gently fold all ingredients together using a spatula, avoiding too much mashing of the black beans.
- Taste the filling and adjust seasoning if needed.
- Warm the tortillas in a skillet or microwave.
- Lay a warm tortilla flat and spoon one-quarter of the filling into the center; shape it into a log.
- Fold in the top and bottom ends of the tortilla, then roll it snugly from the bottom up until sealed.
- Repeat with remaining tortillas and enjoy immediately.
Notes
Use ripe avocados for enhanced flavor. Optional ingredients like bell peppers or spinach can be added for extra nutrition.
