Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon (divided)
1/2 cup unsalted butter (softened) or 1/2 cup oil
1 cup granulated sugar (plus 2 tbsp for topping)
2 eggs
1 1/2 cups finely chopped apples (about 2 medium apples)
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
2. In a bowl, whisk together flour, baking powder, salt, and 1 tsp cinnamon.
3. In a separate bowl, beat butter and sugar until creamy. Add eggs and vanilla, mix well.
4. Gradually add dry ingredients to wet ingredients. Stir until just combined.
5. Fold in chopped apples gently.
6. Pour half the batter into loaf pan. Sprinkle 1 tbsp cinnamon and 1 tbsp sugar mixture.
7. Add remaining batter, top with rest of cinnamon-sugar. Swirl with a knife.
8. Bake for 50–60 minutes or until a toothpick comes out clean.
9. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
10. Slice and serve!
Notes
You can use any baking apple like Honeycrisp, Fuji, or Granny Smith.
Make muffins instead by dividing batter into muffin tins and baking 20–25 minutes.
