  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper.
  3. In a skillet, heat olive oil over medium heat.
  4. Sauté the onion until it becomes translucent.
  5. Add in the garlic and ginger, cooking for another minute until fragrant.
  6. Stir in the coconut milk, lemon juice, and lemon zest. Bring the mixture to a gentle simmer.
