Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, toss the cherry tomatoes and spinach with olive oil, salt, and pepper.
- Crumble the feta cheese over the top.
- Create wells for the eggs and crack them into the dish.
- Bake for 15-20 minutes or until the eggs are set to your liking.
- Garnish with fresh herbs, if desired, and serve warm.
Notes
Let the dish rest for 2 minutes after baking to allow the eggs to set further.
