Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an oven-safe dish, place the feta cheese in the center and surround it with cherry tomatoes and spinach.
  3. Drizzle olive oil over the ingredients and season with salt and pepper.
  4. Use a spoon to create a small well in the feta and crack the eggs into it.
  5. Bake in the oven for about 15-20 minutes, or until the eggs are cooked to your liking and the tomatoes have burst.
  6. Remove from the oven, garnish with fresh herbs if desired, and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or microwave, covered.
