  • 1/4 cup maple syrup (optional)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)
  • 1/3 cup milk or dairy alternative (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a mixing bowl, combine the mashed bananas, rolled oats, maple syrup, baking powder, baking soda, vanilla extract, and salt until well mixed.
  3. If using, add the milk to reach your desired consistency. Fold in any optional add-ins like chocolate chips or blueberries.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool for a few minutes in the tin before transferring the muffins to a wire rack to cool completely.

Notes
