- 4 cod fillets
- 1/4 cup unsalted butter
- 3 tablespoons lemon juice
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 1 tablespoon fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small saucepan, melt the butter and stir in the lemon juice.
- Season the cod fillets with salt and pepper and place them in a baking dish.
- Pour the lemon butter sauce over the cod.
- Sprinkle the breadcrumbs evenly over the top of the fish.
- Bake for 20-25 minutes, or until the fish flakes easily with a fork and the breadcrumbs are golden.
- Garnish with fresh parsley if desired and serve warm.
Notes
Serve with a side of steamed vegetables or a crisp salad. Store leftovers in an airtight container for up to three days.
