- 1 pound boudin sausage
- 2 cups cooked rice
- 1/2 cup green onions, chopped
- 1/2 cup parsley, chopped
- 1 cup breadcrumbs
- 2 eggs, beaten
- Oil for frying
- Salt and pepper to taste
Instructions
- In a large bowl, mix the boudin sausage, cooked rice, green onions, parsley, salt, and pepper.
- Form the mixture into small balls.
- Dip each ball into the beaten eggs, then roll in breadcrumbs to coat.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Fry the boudin balls in batches until golden brown, about 3-4 minutes.
- Remove from oil and drain on paper towels.
- Serve hot with remoulade sauce for dipping.
Notes
Customize the filling by adding your favorite spices. For a healthier version, bake at 400°F for 20-25 minutes instead of frying.
