Ingredients

  • 1 pound boudin sausage
  • 2 cups cooked rice
  • 1/2 cup green onions, chopped
  • 1/2 cup parsley, chopped
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the boudin sausage, cooked rice, green onions, parsley, salt, and pepper.
  2. Form the mixture into small balls.
  3. Dip each ball into the beaten eggs, then roll in breadcrumbs to coat.
  4. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  5. Fry the boudin balls in batches until golden brown, about 3-4 minutes.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with remoulade sauce for dipping.

Notes

Customize the filling by adding your favorite spices. For a healthier version, bake at 400°F for 20-25 minutes instead of frying.
