Juicy caramelised soy chicken simmered in garlic ginger broth, served over fluffy jasmine rice, all made in one pan!

Ingredients

1.5 lbs boneless chicken thighs

1/4 cup soy sauce

2 tbsp brown sugar

4 cloves garlic, minced

1 tbsp fresh ginger, grated

2 cups chicken broth

2 cups cooked jasmine rice

Sliced green onions for garnish

Instructions

1. Pat chicken dry and sear in oil until golden on both sides.

2. Remove chicken. In same pan, sauté garlic and ginger for 30 seconds.

3. Add soy sauce and brown sugar. Let it bubble and form a sticky glaze.

4. Return chicken to pan. Coat in glaze.

5. Pour in chicken broth and simmer for 10 minutes.

6. Serve chicken and broth over rice. Garnish with green onions.

Notes

You can add bok choy, spinach, or snap peas for extra veggies.

Use low-sodium soy sauce if needed.

Store leftovers separately for best texture.
