- 2 cups shredded carrots
- 2 cups diced apples
- 1/4 cup raisins (optional)
- 1/4 cup chopped walnuts (optional)
- 1/2 cup plain yogurt or mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded carrots and diced apples. If desired, add raisins and walnuts for extra texture.
- In a separate small bowl, mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, and a pinch of salt and pepper to create the dressing.
- Pour the dressing over the carrot and apple mixture and toss until well combined.
- Serve chilled and enjoy!
Notes
To store leftovers, place in an airtight container in the refrigerator for up to 3 days. The apples may brown but the taste will remain good.
