  • 2 cups shredded carrots
  • 2 cups diced apples
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded carrots and diced apples. If desired, add raisins and walnuts for extra texture.
  2. In a separate small bowl, mix together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, and a pinch of salt and pepper to create the dressing.
  3. Pour the dressing over the carrot and apple mixture and toss until well combined.
  4. Serve chilled and enjoy!

Notes

To store leftovers, place in an airtight container in the refrigerator for up to 3 days. The apples may brown but the taste will remain good.
