- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated fresh carrots
- 1 teaspoon vanilla extract
- 8 ounces cream cheese
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix oil, eggs, grated carrots, and vanilla.
- Combine the wet ingredients into the dry and mix until just combined.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- While the bars are cooling, prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and vanilla until creamy.
- Once the bars are cool, spread the frosting evenly on top.
- Cut into squares and serve.
