Ingredients

  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated fresh carrots
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix oil, eggs, grated carrots, and vanilla.
  4. Combine the wet ingredients into the dry and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. While the bars are cooling, prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and vanilla until creamy.
  8. Once the bars are cool, spread the frosting evenly on top.
  9. Cut into squares and serve.
