Ingredients

Scale
  • 1 cup finely grated carrot
  • 1 cup crushed graham crackers
  • 1/2 cup cream cheese, softened
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

  2. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Freeze the truffles for about 30 minutes to firm up.
  4. Melt the white chocolate chips in a microwave or double boiler.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off, and coat with sprinkles or crushed nuts if desired.
