Instructions
- In a mixing bowl, combine grated carrot, crushed graham crackers, cream cheese, cinnamon, nutmeg, and ginger; mix well until combined.
- Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze the truffles for about 30 minutes to firm up.
- Melt the white chocolate chips in a microwave or double boiler.
- Dip each truffle into the melted chocolate, allowing excess to drip off, and coat with sprinkles or crushed nuts if desired.
- Return the dipped truffles to the baking sheet and let the chocolate set before serving.
Notes
For a creamier texture, add more cream cheese. Experiment with different chocolate types and coatings for variety.
