Ingredients

  • 4 boneless (skinless chicken breasts)
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place chicken breasts in the dish, drizzle with 1 tbsp olive oil, and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper. Rub seasoning evenly on both sides.
  3. Toss sliced peppers and onions with the remaining 1 tbsp olive oil. Arrange around and over the chicken.
  4. Bake uncovered for 20–25 minutes, or until chicken reaches 165°F (74°C) internally.
  5. Sprinkle mozzarella and Parmesan over the chicken and peppers. Return to oven for 3–5 minutes, or until cheese is melted and bubbly.
  6. Garnish with parsley and serve hot with rice, pasta, or a side salad.

Notes

Pound chicken to even thickness for even cooking. You can prep the chicken and veggies ahead of time, then assemble and bake when ready.
