- 1 pound ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and cheddar cheese until melted and blended.
- Season with salt and pepper to taste.
- Serve hot, garnished with parsley and additional cheese if desired.
Notes
Brown the beef well for more flavor. Cut potatoes into even pieces for uniform cooking.
