Ingredients
2 large chicken breasts
1 cup mushrooms, sliced
2 tablespoons butter
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1/2 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil for searing
Instructions
1. Preheat oven to 375°F (190°C).
2. Butterfly each chicken breast to create a pocket for stuffing.
3. In a pan, melt butter and sauté garlic and mushrooms until soft.
4. Stir in Italian seasoning, salt, and pepper. Remove from heat.
5. Fill each chicken breast with the mushroom mixture and mozzarella.
6. Secure with toothpicks.
7. Sear chicken in olive oil on both sides until golden brown.
8. Transfer to oven and bake for 18–22 minutes, or until internal temperature reaches 165°F.
9. Let rest 5 minutes before serving.
Notes
Use toothpicks or kitchen twine to keep the filling in place.

Mozzarella can be swapped for gouda or provolone for variation.
