Ingredients

- 1 cup fresh cherries, pitted and halved
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup amaretto liqueur
- 1 cup strong brewed coffee, cooled
- 12–16 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream.
- In a shallow dish, combine coffee and amaretto.
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them. Layer half of the dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherries.
- Repeat with another layer of ladyfingers, mascarpone mixture, and cherries.
- Cover and refrigerate for at least 240 minutes or overnight.
- Before serving, dust the top with cocoa powder.
Notes
For a kid-friendly version, replace amaretto with almond extract. This dessert can be made ahead of time and stored in the refrigerator.
