A creamy and fruity dessert combining fresh cherries and rich mascarpone cheese, ideal for busy moms.

Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup amaretto liqueur
  • 1 cup strong brewed coffee, cooled
  • 1216 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream.
  3. In a shallow dish, combine coffee and amaretto.
  4. Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them. Layer half of the dipped ladyfingers in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherries.
  6. Repeat with another layer of ladyfingers, mascarpone mixture, and cherries.
  7. Cover and refrigerate for at least 240 minutes or overnight.
  8. Before serving, dust the top with cocoa powder.

Notes

For a kid-friendly version, replace amaretto with almond extract. This dessert can be made ahead of time and stored in the refrigerator.
