- 2 pounds chicken breasts
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 avocado, sliced
- Cilantro lime dressing (to taste)
- Salt and pepper (to taste)
- Cooked rice or quinoa (for serving)
Instructions
- Place the chicken breasts in the crockpot.
- Pour salsa over the chicken.
- Add black beans and corn on top.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, shred the chicken with two forks.
- Serve over cooked rice or quinoa.
- Top with avocado slices and drizzle with cilantro lime dressing.
Notes
Use pre-cooked rotisserie chicken for quicker preparation. Experiment with different toppings such as diced tomatoes or shredded cheese.
