Ingredients
1½ lbs boneless chicken thighs or breasts
3 tbsp olive oil
Juice of 1 lemon
4 garlic cloves, minced
1 tbsp red wine vinegar
1 tsp ground cumin
1 tsp dried oregano
½ tsp smoked paprika
Salt and pepper to taste
Soft pita bread or flatbreads
Sliced red onions
Diced tomatoes
Chopped cucumber
Fresh parsley
Tzatziki sauce
Instructions
1. Combine olive oil, lemon juice, garlic, vinegar, and spices in a bowl.
2. Add chicken, coat well, and marinate for at least 30 minutes.
3. Grill or pan-cook the chicken until golden and fully cooked.
4. Let the chicken rest, then slice thinly.
5. Warm pita bread slightly in a pan or oven.
6. Assemble by layering chicken, veggies, and tzatziki into each pita.
7. Serve immediately with fresh parsley and optional lemon wedges.
Notes
Marinating overnight boosts flavor even more.
Use thighs for juicier, more tender chicken.
Swap pita for rice to make a Chicken Gyros bowl.
