Chicken Lo Mein is a fast, delicious noodle stir-fry with tender chicken, crisp veggies, and a savory sauce that’s better than takeout.

Ingredients

8 oz lo mein noodles (or spaghetti)

1 lb boneless chicken breast, sliced

1/4 cup soy sauce

2 tbsp oyster sauce

1 tsp sesame oil

2 cloves garlic, minced

1/2 cup shredded carrots

1/2 cup snap peas

1 tbsp oil for stir-frying

Instructions

1. Cook noodles according to package directions. Drain and set aside.

2. In a bowl, whisk together soy sauce, oyster sauce, and sesame oil. Set aside.

3. Heat oil in a large skillet or wok. Add chicken and stir-fry until cooked through.

4. Add garlic and cook until fragrant.

5. Toss in carrots and snap peas, stir-fry for 2-3 minutes.

6. Add cooked noodles and sauce. Toss everything until well coated.

7. Serve hot, garnished with green onions or sesame seeds if desired.

Notes

Use any vegetables you have on hand; bell peppers, mushrooms, or cabbage all work well.

You can substitute the chicken with shrimp or tofu.
