Ingredients

- 1 can of chickpeas, drained and rinsed
- 1 cup of dark chocolate chips or chopped dark chocolate
- 1/4 cup of maple syrup or agave syrup
- 1/4 cup of almond butter or any nut butter
- 1 teaspoon of vanilla extract
- A pinch of salt
- Cocoa powder for dusting (optional)
Instructions
- In a food processor, combine the chickpeas, dark chocolate, maple syrup, almond butter, vanilla extract, and salt. Blend until smooth and creamy.
- Taste and adjust sweetness if needed.
- Scoop out small amounts of the mixture and roll into balls.
- If desired, roll the truffles in cocoa powder to coat.
- Place the truffles on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Serve chilled and enjoy!
Notes
Store truffles in an airtight container in the fridge for up to one week. For longer storage, freeze before firming up and thaw before serving.
