Chickpea Truffles

Quick and easy truffles made from chickpeas and chocolate, perfect for busy days.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 cup of dark chocolate chips or chopped dark chocolate
  • 1/4 cup of maple syrup or agave syrup
  • 1/4 cup of almond butter or any nut butter
  • 1 teaspoon of vanilla extract
  • A pinch of salt
  • Cocoa powder for dusting (optional)

Instructions

  1. In a food processor, combine the chickpeas, dark chocolate, maple syrup, almond butter, vanilla extract, and salt. Blend until smooth and creamy.
  2. Taste and adjust sweetness if needed.
  3. Scoop out small amounts of the mixture and roll into balls.
  4. If desired, roll the truffles in cocoa powder to coat.
  5. Place the truffles on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Serve chilled and enjoy!

Notes

Store truffles in an airtight container in the fridge for up to one week. For longer storage, freeze before firming up and thaw before serving.
