- 1 lb grilled chicken breast
- 1 cup cooked rice
- 1 cup black beans (canned or cooked)
- 1 cup fresh vegetables (lettuce, tomatoes, onions, bell peppers)
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Season the grilled chicken breast with salt and pepper, then slice it into strips.
- In a large bowl, combine the cooked rice, black beans, fresh vegetables, and chipotle ranch dressing.
- Lay a tortilla flat and spoon some of the rice and bean mixture in the center. Top with sliced grilled chicken.
- Fold in the sides of the tortilla and roll it up tightly.
- Repeat with the remaining tortillas and filling.
- Serve warm and enjoy!
