Ingredients

  • 1 cup cooked rice
  • 1 cup black beans (canned or cooked)
  • 1 cup fresh vegetables (lettuce, tomatoes, onions, bell peppers)
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. Season the grilled chicken breast with salt and pepper, then slice it into strips.
  2. In a large bowl, combine the cooked rice, black beans, fresh vegetables, and chipotle ranch dressing.
  3. Lay a tortilla flat and spoon some of the rice and bean mixture in the center. Top with sliced grilled chicken.
  4. Fold in the sides of the tortilla and roll it up tightly.
  5. Repeat with the remaining tortillas and filling.
  6. Serve warm and enjoy!
