Ingredients
1 ½ cups rolled oats
¾ cup shredded unsweetened coconut
½ cup chocolate protein powder
¼ cup cocoa powder
½ cup almond butter
¼ cup honey or maple syrup
1 tsp vanilla extract
2–3 tbsp milk of choice
Pinch of sea salt
Optional: mini chocolate chips
Instructions
1. In a bowl, combine oats, coconut, protein powder, cocoa, and salt.
2. Add almond butter, honey, vanilla, and 2 tbsp milk. Mix until sticky.
3. Press into a lined 8×8-inch pan. Smooth and press firmly.
4. Top with chocolate chips if using. Press gently to set.
5. Chill for 1 hour, then slice into bars and enjoy.
Notes
Use maple syrup for vegan version.
Store bars in the fridge for up to 7 days or freeze for 2 months.
