- 2 cups all-purpose flour

- For the streusel topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, cold and cut into small pieces
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or a light greasing.
- In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the melted butter, milk, eggs, and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and mix gently, being careful not to overmix.
- Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a small bowl. Add the cold butter and mix until coarse crumbs form.
- Spoon the muffin batter into the muffin tin, filling each cup about 2/3 full, and sprinkle with the streusel topping.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature with coffee or tea. Store in an airtight container for 2-3 days or freeze for longer storage. Consider adding nuts, chocolate chips, or dried fruit for variations.
