Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners or a light greasing.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently, being careful not to overmix.
  5. Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a small bowl. Add the cold butter and mix until coarse crumbs form.
  6. Spoon the muffin batter into the muffin tin, filling each cup about 2/3 full, and sprinkle with the streusel topping.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
