Ingredients

  • 1 egg
  • 1/4 cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 1/2 cups all-purpose flour
  • 2 tbsp melted butter
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 2 tbsp all-purpose flour
  • 1/2 cup chopped walnuts (optional)
  • 1 tbsp butter (room temperature)
  • 3/4 cup powdered sugar
  • 1 tbsp milk (extra, if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
  2. In a large mixing bowl, beat the egg and add the oil, vanilla, sugar, milk, and salt. Mix well until combined.
  3. Stir in the baking powder and flour until just blended.
  4. Pour half of the batter into the prepared pan.
  5. In a small bowl, combine the melted butter, brown sugar, cinnamon, and additional flour. Mix in the chopped walnuts if using.
  6. Sprinkle the streusel mixture over the batter in the pan.
  7. Pour the remaining batter on top, carefully spreading it to cover the streusel.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack.
  10. For optional icing, mix powdered sugar and milk for a drizzle over the cooled cake.

Notes

Store leftover Coffee Cake covered at room temperature for up to three days or refrigerate for about a week.
