- 1 egg
- 1/4 cup vegetable or canola oil
- 1 tsp vanilla extract
- 3/4 cup sugar
- 1/2 cup milk
- 1/4 tsp salt
- 2 tsp baking powder
- 1 1/2 cups all-purpose flour
- 2 tbsp melted butter
- 1/2 cup brown sugar
- 2 tsp cinnamon
- 2 tbsp all-purpose flour
- 1/2 cup chopped walnuts (optional)
- 1 tbsp butter (room temperature)
- 3/4 cup powdered sugar
- 1 tbsp milk (extra, if needed)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
- In a large mixing bowl, beat the egg and add the oil, vanilla, sugar, milk, and salt. Mix well until combined.
- Stir in the baking powder and flour until just blended.
- Pour half of the batter into the prepared pan.
- In a small bowl, combine the melted butter, brown sugar, cinnamon, and additional flour. Mix in the chopped walnuts if using.
- Sprinkle the streusel mixture over the batter in the pan.
- Pour the remaining batter on top, carefully spreading it to cover the streusel.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack.
- For optional icing, mix powdered sugar and milk for a drizzle over the cooled cake.
Notes
Store leftover Coffee Cake covered at room temperature for up to three days or refrigerate for about a week.
