- 12 oz bow tie pasta
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced (mixed colors)
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the bow tie pasta according to package instructions, then drain and rinse with cold water.
- In a large bowl, combine the cooked pasta with cherry tomatoes, bell peppers, cucumber, red onion, black olives, parsley, and feta cheese.
- In a separate small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
Notes
For a heartier salad, add grilled chicken, tuna, or salami. Store in an airtight container for 3-4 days.
