This cookie and ice cream sandwich recipe brings together soft, chewy cookies and creamy frozen layers in one easy-to-make dessert.

Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 eggs

1 tsp vanilla extract

2 1/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup chocolate chips

1 pint vanilla or flavor-of-choice ice cream

Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

2. Cream butter and sugars until fluffy. Beat in eggs and vanilla.

3. In a separate bowl, mix flour, baking soda, and salt. Add to wet ingredients.

4. Stir in chocolate chips.

5. Scoop dough onto baking sheet. Bake 10–12 minutes. Cool completely.

6. Let ice cream soften 5 minutes. Scoop onto a cookie, top with another.

7. Wrap sandwiches and freeze for 2 hours before serving.

Notes

For clean layers, freeze ice cream between sheets and use a round cutter.

Switch up flavors using different cookies or ice cream.

Add fun by rolling in sprinkles or chocolate chips.
