1/2 cup full-fat cottage cheese

Instructions

1. Preheat your oven to 375°F (190°C).

2. Lightly grease 2 ramekins or muffin tin wells.

3. In a bowl, whisk together eggs, cottage cheese, salt, and optional spices.

4. Pour evenly into prepared ramekins.

5. Bake for 18–20 minutes or until eggs are set to your liking.

6. Garnish with fresh herbs and serve warm.

Notes

You can add chopped spinach, tomatoes, or cooked bacon for extra flavor.
