Ingredients
3 large eggs
1/2 cup cottage cheese (full-fat or low-fat)
1/4 tsp baking powder
Pinch of salt (optional)
1/4 tsp garlic powder or herbs (optional)
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. Separate egg whites and yolks into two bowls.
3. Whip egg whites with baking powder until stiff peaks form.
4. In a separate bowl, blend cottage cheese and egg yolks until smooth.
5. Gently fold the egg whites into the yolk mixture until combined.
6. Spoon mixture onto baking sheet into round mounds.
7. Bake for 25–30 minutes until golden and set.
8. Let cool slightly before serving.
Notes
Don’t overmix when folding — you want to keep the batter airy.
Customize flavor with cinnamon or herbs.
Store in fridge up to 3 days or freeze for 2 months.
