Cowboy Soup is a hearty one-pot recipe with beef, beans, potatoes, and veggies. It’s simple, flavorful, and perfect for busy weeknights.

Ingredients

1 lb ground beef

1 medium onion, diced

2 cans diced tomatoes

1 can corn, drained

1 can kidney or pinto beans

3 cups beef broth

2 medium potatoes, diced

Chili powder, cumin, garlic powder, salt, pepper to taste

Instructions

1. In a large pot, brown ground beef and diced onion. Drain excess grease.

2. Add tomatoes, corn, beans, potatoes, and broth.

3. Season with chili powder, cumin, garlic powder, salt, and pepper.

4. Bring to a boil, then reduce to a simmer for 25–30 minutes until potatoes are tender.

5. Serve hot with cornbread or crackers.

Notes

This soup tastes even better the next day.

Add jalapeños or green chilies for heat.

Great for freezing in batches for meal prep.
