- 8 slices of bacon
- 1 cup shredded cheese (cheddar or your choice)
- 6 large eggs
- 2 cups hash browns (thawed if frozen)
- 1 cup milk
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the bacon until crispy, then crumble it.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Layer the hash browns in a greased baking dish.
- Sprinkle the crumbled bacon and cheese over the hash browns.
- Pour the egg mixture over the top.
- Bake for 30-35 minutes, or until the eggs are set and the top is lightly golden.
- Let it cool slightly, then garnish with green onions if desired and serve.
Notes
You can prepare this casserole in advance and store it in the refrigerator overnight. It can also be frozen before or after baking.
