Ingredients

  • 1 pound mushrooms
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • 4 cups vegetable or chicken broth

Instructions

  1. In a large skillet, melt butter over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add sliced mushrooms and cook until browned and tender.
  4. Pour in a dash of white wine and let it simmer for a few minutes.
  5. In a pot, combine the cooked mushrooms and garlic mix with vegetable or chicken broth. Bring to a boil and then reduce to a simmer.
  6. Blend the mixture until smooth, then stir in heavy cream.
  7. Season with salt and pepper to taste. Serve hot.

Notes

Use a variety of mushrooms for more depth of flavor. For a vegan version, substitute heavy cream with coconut milk.
