- 1 lb chicken breast
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a skillet, heat olive oil over medium heat and cook the chicken until browned and cooked through, about 6-7 minutes per side. Remove chicken and let rest.
- In the same skillet, add rice and toast for 1-2 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- Stir in heavy cream and Parmesan cheese until smooth.
- Slice the chicken and serve on top of the creamy rice mixture.
- Garnish with parsley before serving.
Notes
For extra texture, top with toasted breadcrumbs or chopped roasted red peppers. For a lighter option, use half-and-half instead of heavy cream.
