Ingredients

  • 8 oz pasta (fettuccine or spaghetti)
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp and Cajun seasoning; cook until shrimp are pink and cooked through, about 3-4 minutes. Remove shrimp and set aside.
  3. In the same skillet, add garlic and sauté for about 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream; bring to a simmer.
  5. Stir in Parmesan cheese until melted and smooth.
  6. Add cooked pasta and shrimp to the skillet, mixing to coat in the sauce.
  7. Season with salt and pepper to taste.
  8. Serve immediately, garnished with chopped parsley.

Notes

For added veggies, consider adding spinach or sun-dried tomatoes. You can substitute shrimp with chicken or scallops if desired.
