- 8 oz pasta (fettuccine or spaghetti)
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the pasta according to package directions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add shrimp and Cajun seasoning; cook until shrimp are pink and cooked through, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, add garlic and sauté for about 1 minute until fragrant.
- Pour in chicken broth and heavy cream; bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and shrimp to the skillet, mixing to coat in the sauce.
- Season with salt and pepper to taste.
- Serve immediately, garnished with chopped parsley.
Notes
For added veggies, consider adding spinach or sun-dried tomatoes. You can substitute shrimp with chicken or scallops if desired.
