  • 1 can black beans
  • 2 cups shredded chicken
  • 1 can sweet corn

  • 4 cups chicken broth

  • Sour cream (optional)

Instructions

  1. In a large pot or Crockpot, combine Rotel tomatoes, black beans, shredded chicken, and sweet corn.
  2. Add cream, chicken broth, and taco seasoning.
  3. Stir well to combine.
  4. Cook on the stove over medium heat until heated through, or on low in the Crockpot for 4-6 hours.
  5. Serve hot, topped with cheese and sour cream if desired.

Notes

For added flavor, use shredded rotisserie chicken. You can adjust the spice level with mild or spicy Rotel tomatoes. For a thicker soup, use less chicken broth or blend part of the soup back in.
