  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt
  • 5 chicken cutlets
  • Sea salt (to taste)
  • Ground black pepper (to taste)
  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ½ tsp salt
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¼ tsp salt
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 romaine hearts (chopped)
  • 12 French baguettes

Instructions

  1. In a bowl, prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, minced garlic, black pepper, and a pinch of sea salt until smooth and creamy.
  2. Take 4-5 tablespoons of the dressing and mix it with the chopped romaine lettuce. Cover and refrigerate both the salad and the remaining dressing separately.
  3. Evenly pound the chicken cutlets if they are uneven in thickness and season both sides with sea salt and black pepper.
  4. Set up three shallow plates for breading: mix flour, salt, and smoked paprika in the first; whisk eggs with a little salt in the second; combine panko, breadcrumbs, parsley, pepper, salt, oregano, garlic powder, and grated Parmesan in the third.
  5. Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, dip in the egg mixture, and coat in the breadcrumb mixture.
  6. Fry the chicken cutlets in hot oil until golden brown and fully cooked, approximately 4-5 minutes per side. Drain on a wire rack.
  7. Slice the baguettes into 12 cm portions and cut open lengthwise. Spread a layer of Caesar dressing inside, place a crispy chicken cutlet, top with Caesar salad, and sprinkle extra Parmesan. Close the sandwiches and serve hot.

Notes

Consider adding crispy bacon or avocado for added richness. For a healthier option, bake the chicken instead of frying.
