Ingredients

  • 2 chicken breasts
  • 1 cup dill pickles (chopped)
  • 1 cup Parmesan cheese (grated)
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 egg (beaten)
  • Oil for frying

Instructions

  1. Prepare the chicken by trimming any fat and patting it dry.
  2. Mix chopped dill pickles with the beaten egg in one bowl.
  3. In a second bowl, mix grated Parmesan, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. Dip each chicken breast into the pickle and egg mix, then press into the breadcrumb mixture to coat well.
  5. Heat a little oil in a skillet over medium heat.
  6. Add the chicken and cook 4–5 minutes per side until golden brown.
  7. If you want to bake, preheat the oven to 400°F (200°C) and transfer the browned chicken to a baking dish.
  8. Bake 15–20 minutes until the chicken is fully cooked.
  9. Let the chicken rest for a few minutes, then slice and serve warm.

Notes

Pat the chicken dry to help the coating stick. Press crumbs firmly for a better crust.
