Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a slow cooker, add the chicken breasts, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
  3. Remove the chicken and shred it with two forks, then return it to the slow cooker.
  4. Stir in the heavy cream and grated Parmesan cheese until well combined.
  5. Cook for an additional 30 minutes on low.
  6. Serve warm, garnished with fresh basil.

Notes

Use low salt chicken broth if you watch salt. Stir in cream and cheese near the end to avoid curdling.
