Creamy crockpot cheeseburger soup made with beef, potatoes, cheddar cheese, and vegetables for the ultimate cozy meal.

Ingredients

1 lb ground beef

4 cups diced potatoes

1 cup diced carrots

1 cup diced celery

1 onion, chopped

3 cups chicken broth

2 cups shredded cheddar cheese

1 cup milk or heavy cream

2 tbsp butter

2 tbsp flour

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

Crumpled bacon & green onions for garnish

Instructions

1. Brown beef in skillet, drain fat.

2. Add beef, potatoes, carrots, celery, onion to crockpot.

3. Stir in broth, garlic powder, paprika, salt, and pepper.

4. Cook on low 6–7 hrs or high 3–4 hrs until potatoes are tender.

5. Melt butter, whisk with flour and milk, add to crockpot.

6. Stir in cheddar until melted and creamy.

7. Serve hot, garnish with bacon and green onions.

Notes

For freezing, leave out cheese and milk. Add them when reheating for best texture.
