This Crockpot Lasagna Soup is rich, cheesy, and slow-cooked to perfection; perfect for busy weeknights or cozy weekends.

Ingredients

1 lb ground beef or Italian sausage

1 medium onion, chopped

3 garlic cloves, minced

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

4 cups beef broth

1 tbsp Italian seasoning

8 lasagna noodles, broken

1 cup ricotta cheese

1 cup mozzarella, shredded

1/4 cup Parmesan, grated

Instructions

1. Brown beef and onion in a skillet until cooked; add garlic and cook 1 more minute.

2. Transfer meat mixture to crockpot. Add crushed tomatoes, tomato paste, broth, and Italian seasoning.

3. Cover and cook on low for 6–7 hours or high for 3–4 hours.

4. About 30 minutes before serving, stir in broken lasagna noodles.

5. When noodles are tender, stir in ricotta, mozzarella, and Parmesan. Let cheese melt.

6. Serve hot with optional garnish and garlic bread.

Notes

Make ahead tip: Freeze without noodles and cheese.

Add spinach or mushrooms for extra nutrition.

Use spicy sausage for added kick.
