Ingredients

  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the nuts, oats, and sea salt.
  3. In a small saucepan over low heat, combine honey (or maple syrup) and vanilla extract until warmed through.
  4. Pour the honey mixture over the nut and oat mixture and stir until evenly coated.
  5. Fold in the dark chocolate chips.
  6. Press the mixture into the prepared baking pan firmly.
  7. Bake for 15-20 minutes until golden.
  8. Allow to cool completely before cutting into bars.

Notes

Adjust sweetness with more or less honey/maple syrup. For a chewier texture, add dried fruits. Can substitute mixed nuts with nut butter for a creamy bar.
