A hearty and comforting Irish Potato Pie that comes together quickly, perfect for busy weeknights.

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 large potatoes, peeled and chopped
  • 2 tablespoons butter
  • ½ cup milk
  • 1 cup shredded cheese (cheddar or your favorite)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 prepared pie crust (store-bought or homemade)
  • Fresh herbs (like chives or parsley) for added flavor, optional

Instructions

  1. Peel and chop the potatoes into small pieces.
  2. Boil the potatoes in a pot of salted water until fork-tender, about 15 to 20 minutes. Drain and return the potatoes to the pot.
  3. Add butter, milk, and shredded cheese to the hot potatoes. Mash until smooth and season with salt and pepper.
  4. Preheat your oven to 400°F (200°C).
  5. Roll out the prepared pie crust into a pie dish. Pour the creamy potato mixture into the crust and spread evenly.
  6. Brush the edges of the crust with the beaten egg.
  7. Bake the pie for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbling.
  8. Let it cool slightly before slicing and serving.

Notes

Feel free to add cooked bacon or ham for a heartier dish. Mix in vegetables like peas or corn for extra nutrition.
