  • 1 cup Shredded Cheddar Cheese (Sharp cheddar for a more robust flavor)
  • 1 pound Ground Beef (Can substitute with ground chicken or turkey)
  • 2 tablespoons Taco Seasoning (Use homemade or low-sodium versions)
  • 4 pieces Low-Carb Tortillas (Brands like Mission Carb Balance or almond flour tortillas)
  • 1 cup Sour Cream (Substitute with Greek yogurt for a lighter version)
  • 1 cup Lettuce (Shredded iceberg or romaine)
  • 1 medium Tomato (Can replace with bell peppers or omit for fewer carbs)
  • 1 cup Extra Cheddar Cheese (Consider adding pepper jack for extra spice)
  • 1/4 cup Cilantro (Substitute with parsley if you’re not a fan)
  • 1/2 cup Jalapeño Slices (Optional spicy addition)

Instructions

  1. Melt butter, add cream cheese and heavy cream, stir until smooth. Add shredded cheddar and stir until melted.
  2. Heat oil, brown the ground beef, add taco seasoning and a splash of water. Cook until it is well mixed and not wet.
  3. Heat a dry pan and warm each low-carb tortilla until it gets a little crisp and pliable.
  4. Spread some cheese sauce on a tortilla, add beef, sour cream, lettuce, tomato, extra cheddar, cilantro, and jalapeño slices. Fold edges up to make a tight wrap.
  5. Cook the folded side down on a hot pan with a little oil. Press and cook until golden, then flip and cook the other side.
  6. Let sit a minute, then slice and serve while warm.

Notes

Use room-temperature cream cheese for a smoother sauce. Press the assembled wrap while cooking to seal it well. Cook on medium heat to avoid burning the tortilla.
