- 1 lb thinly sliced ribeye or sirloin beef
- 8 oz provolone cheese, sliced
- 1 cup mixed bell peppers, chopped
- 1 medium sweet onion, chopped
- 2 tbsp extra virgin olive oil
- 4 low-carb tortillas
Instructions
- Gather and prep your ingredients: slice the beef into thin strips and chop the bell peppers and onion.
- Heat olive oil in a skillet over medium heat; sauté the onions and bell peppers until softened (about 5-7 minutes).
- Increase the heat to medium-high, add sliced beef, season with salt and pepper, and cook until browned (3-5 minutes).
- Reduce the heat to low; place provolone slices over the beef mixture to melt completely.
- Spoon the beef-cheese mixture onto each tortilla and roll tightly.
- Return roll-ups seam-side down to the skillet; cook until golden brown on all sides (about 3-4 minutes total).
Notes
These roll-ups can be served hot with low-carb dipping sauce, a simple salad, or customized with additional veggies.
