Dorito Casserole with Ground Beef

This cheesy Dorito casserole with ground beef is an easy, crowd-pleasing dinner your whole family will love. Crunchy, creamy, and layered with flavor.

Ingredients

1 lb ground beef

1 small onion, chopped

1 packet taco seasoning

1 can Rotel (or salsa)

1 cup sour cream

1 can cream of mushroom soup (optional)

2 cups shredded cheddar cheese

1 large bag Nacho Cheese Doritos

Optional: black beans, corn, jalapeños, green onions

Instructions

1. Preheat oven to 350°F and grease a 9×13 baking dish.

2. Brown ground beef and onions in a skillet; drain fat.

3. Stir in taco seasoning and Rotel; simmer 5 minutes.

4. Mix sour cream and soup (if using), and stir into beef mixture.

5. Layer 1/3 crushed Doritos in dish, then half the beef mix, and 1/3 cheese. Repeat layers.

6. Finish with remaining Doritos and cheese on top.

7. Bake uncovered 20–25 minutes, until cheese is melted and golden.

8. Let cool slightly before serving.

Notes

Best served hot. Garnish with green onions or sour cream if desired.

Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
