Ingredients
3 cups cooked, shredded chicken
1 can cream of chicken soup
1 cup sour cream
1 can Rotel (undrained)
2 cups shredded Mexican blend cheese
1 bag Nacho Cheese Doritos, lightly crushed
1 tsp taco seasoning
Fresh cilantro or green onions for garnish
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, mix chicken, soup, sour cream, Rotel, and taco seasoning.
3. Lightly crush Doritos and spread a layer on the bottom of a 9×13 baking dish.
4. Spoon half of the chicken mixture over the chips.
5. Sprinkle with 1 cup of cheese.
6. Repeat layers with remaining chips, chicken mix, and cheese.
7. Bake for 25–30 minutes until bubbly and golden.
8. Let rest 10 minutes, garnish, and serve.
Notes
For extra spice, add diced jalapeños or hot Rotel.
Reheat leftovers in the oven with extra crushed Doritos for crunch.
Use rotisserie chicken to save time.
