Ingredients

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream
  • 1 cup chocolate ganache
  • 1 cup crushed pistachios
  • 1 cup chocolate cookie crumbs
  • 1/2 cup melted butter

Instructions

  1. In a bowl, combine crushed chocolate cookies and melted butter. Press into the bottom of a springform pan to form the crust.
  2. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold in the whipped cream gently.
  4. Add the chocolate ganache and mix until well combined.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Chill in the refrigerator for at least 240 minutes or until set.
  7. Top with crushed pistachios before serving.

Notes

For a lighter cheesecake, substitute Greek yogurt for cream cheese. Adjust sweetness by varying powdered sugar.
