- 8 ounces cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups whipped cream
- 1 cup chocolate ganache
- 1 cup crushed pistachios
- 1 cup chocolate cookie crumbs
- 1/2 cup melted butter
Instructions
- In a bowl, combine crushed chocolate cookies and melted butter. Press into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the whipped cream gently.
- Add the chocolate ganache and mix until well combined.
- Pour the cheesecake mixture over the crust and smooth the top.
- Chill in the refrigerator for at least 240 minutes or until set.
- Top with crushed pistachios before serving.
Notes
For a lighter cheesecake, substitute Greek yogurt for cream cheese. Adjust sweetness by varying powdered sugar.
