Ingredients
2 butter croissants
2 large eggs
2 slices cheddar cheese
4 slices cooked bacon (or sausage patties)
1 tbsp butter
Salt and pepper to taste
Optional: avocado, spinach, or tomato slices
Optional sauce: garlic aioli, chipotle mayo, or maple mustard
Instructions
1. Slice croissants in half horizontally and toast lightly in a skillet or toaster oven.
2. Whisk eggs with salt and pepper, then scramble in a nonstick pan with butter until soft and creamy.
3. Place one slice of cheese on each bottom croissant half while warm.
4. Top with scrambled eggs and 2 slices of cooked bacon or 1 sausage patty.
5. Add optional toppings like avocado, spinach, or tomato.
6. Spread chosen sauce on the top croissant half and close the sandwich.
7. Serve warm or wrap in foil to go.
Notes
Croissants toast quickly, so keep an eye on them to avoid burning.
Make it vegetarian by skipping the meat or adding sautéed mushrooms.
These sandwiches reheat well wrapped in foil at 350°F for 10–12 minutes.
