Ingredients

  • 1 cup peanut butter (natural or regular)
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • 1/4 tsp salt (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a mixing bowl, combine peanut butter, rolled oats, and honey (or syrup) until well mixed.
  2. If desired, add mini chocolate chips, salt, and vanilla extract and mix well.
  3. Press the mixture firmly into muffin liners or molds.
  4. Refrigerate for at least 30 minutes to set.
  5. Serve chilled or slightly warmed in the microwave for a few seconds.
