- 2 cups fresh or frozen cherries, pitted
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a bowl, combine cherries, granulated sugar, cornstarch, and vanilla extract. Mix well and set aside.
- In another bowl, mix the flour, oats, brown sugar, melted butter, cinnamon, and salt until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish to form a crust.
- Spread the cherry mixture evenly over the crust.
- Crumble the remaining oat mixture over the cherries.
- Bake for 30-35 minutes or until the top is golden and the cherries are bubbly.
- Allow to cool before slicing into bars and serving.
Notes
These bars can be enhanced with different fruits or nuts. Serve warm with ice cream for a delightful treat.
