- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- Salt and pepper to taste
- Optional: diced bell peppers, onions, or other vegetables
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the chopped spinach, feta cheese, and any other optional vegetables.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until the muffins are set and lightly golden.
- Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator.
Notes
Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage. Avoid overfilling the muffin cups.
