Delicious and healthy egg muffins packed with spinach and feta cheese, perfect for breakfast or snacks.

Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • Salt and pepper to taste
  • Optional: diced bell peppers, onions, or other vegetables

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Stir in the chopped spinach, feta cheese, and any other optional vegetables.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 18-20 minutes, or until the muffins are set and lightly golden.
  6. Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage. Avoid overfilling the muffin cups.
